Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with olive oil.
  2. Grate about 2 cups of zucchini, and squeeze out excess moisture using a towel.
  3. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, oregano, and black pepper.
  4. In another bowl, beat the eggs and mix in olive oil and grated zucchini, folding in cheese.
  5. Combine wet and dry ingredients gently to avoid overmixing.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, rotating halfway through, until golden and a toothpick comes out clean.
  8. Cool in the pan for 10-15 minutes before transferring to a wire rack to slice.
