- Preheat your oven to 180°C (350°F) while you line a 9x9 inch baking dish with baking paper, ensuring it hangs over the edges for easy removal later.
- Grate the zucchini and carrot, then sprinkle them with salt and let them sit in a colander for about 10 minutes.
- In a frying pan, heat a splash of olive oil over medium heat, and add the diced onion and bacon. Cook until the onion is golden and the bacon is crispy, about 5-7 minutes.
- Combine the drained zucchini and carrot in a large mixing bowl with the sautéed onion and bacon, diced capsicum, self-raising flour, grated cheese, eggs, and milk. Mix until well combined.
- Pour the mixture into the prepared baking tray, smoothing the top. Sprinkle the remaining grated cheese on top. Bake for 35-40 minutes until golden brown and firm.
