Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) while you line a 9x9 inch baking dish with baking paper, ensuring it hangs over the edges for easy removal later.
  2. Grate the zucchini and carrot, then sprinkle them with salt and let them sit in a colander for about 10 minutes.
  3. In a frying pan, heat a splash of olive oil over medium heat, and add the diced onion and bacon. Cook until the onion is golden and the bacon is crispy, about 5-7 minutes.
  4. Combine the drained zucchini and carrot in a large mixing bowl with the sautéed onion and bacon, diced capsicum, self-raising flour, grated cheese, eggs, and milk. Mix until well combined.
  5. Pour the mixture into the prepared baking tray, smoothing the top. Sprinkle the remaining grated cheese on top. Bake for 35-40 minutes until golden brown and firm.
