Preparation Steps
  1. Rinse 2-3 fresh cucumbers under cold water and slice them thinly—about ¼ inch. Place in a large mixing bowl.
  2. Halve a handful of ripe cherry tomatoes and add them to the bowl. Thinly slice a red onion and toss both with the cucumbers.
  3. Finely chop 1-2 jalapeños and sprinkle them into the bowl, adjusting the amount based on spice preference.
  4. Chop a handful of fresh cilantro and add it to the mixture for enhanced flavor.
  5. In a small bowl, whisk together lime juice, olive oil, honey, salt, and black pepper for the dressing.
  6. Pour the dressing over the salad mixture and gently toss everything together.
  7. Cover and chill in the refrigerator for at least 15-20 minutes before serving.
