  1. In a small saucepan, combine freshly squeezed lemon juice, water, and granulated sugar. Heat until sugar dissolves, about 2-3 minutes, then cool.
  2. In a large bowl, whip cold heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form. In another bowl, beat mascarpone cheese with lemon zest until smooth. Fold whipped cream into mascarpone.
  3. Dip ladyfingers in cooled lemon syrup quickly, then layer in a 9x9-inch dish. Spread half of the mascarpone cream over, repeat layers ending with cream.
  4. Cover with plastic wrap and refrigerate for at least 4-6 hours or overnight for optimal flavor.
