- In a large mixing bowl, combine crawfish or shrimp, diced andouille sausage, shredded cheddar cheese, diced red bell pepper, diced red onion, cooked rice, Cajun seasoning, and chopped parsley. Mix thoroughly.
- Position an egg roll wrapper in a diamond shape. Spoon 2 to 3 tablespoons of the filling onto the center. Fold the bottom corner over the filling, then the sides, and roll tightly towards the top corner.
- Heat vegetable oil to 350°F (175°C) in a deep skillet. Use a small piece of bread to test if the oil is ready by checking if it bubbles.
- Carefully place the egg rolls seam-side down into the hot oil and fry for 2 to 3 minutes per side until golden brown.
- Transfer fried egg rolls to a serving platter and serve with dipping sauces.
