Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine crawfish or shrimp, diced andouille sausage, shredded cheddar cheese, diced red bell pepper, diced red onion, cooked rice, Cajun seasoning, and chopped parsley. Mix thoroughly.
  2. Position an egg roll wrapper in a diamond shape. Spoon 2 to 3 tablespoons of the filling onto the center. Fold the bottom corner over the filling, then the sides, and roll tightly towards the top corner.
  3. Heat vegetable oil to 350°F (175°C) in a deep skillet. Use a small piece of bread to test if the oil is ready by checking if it bubbles.
  4. Carefully place the egg rolls seam-side down into the hot oil and fry for 2 to 3 minutes per side until golden brown.
  5. Transfer fried egg rolls to a serving platter and serve with dipping sauces.
