  • 1 cup Cooked Quinoa Can substitute with cooked brown rice or millet
  • 1 can Black Beans Drained and rinsed
  • 1 cup Breadcrumbs Can substitute with gluten-free breadcrumbs or almond flour
  • 2 cloves Garlic Minced
  • 1 teaspoon Smoked Paprika Can use regular paprika if preferred
  • 1 teaspoon Cumin Can experiment with coriander
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Mash the cooked sweet potatoes in a large mixing bowl until smooth.
  3. Fold in the cooked quinoa, black beans, and breadcrumbs. Add the minced garlic, smoked paprika, cumin, salt, and pepper, mixing until fully combined.
  4. Form the mixture into balls about the size of a golf ball and place them on the baking sheet.
  5. Bake in the preheated oven for 25-30 minutes until golden brown.
  6. Allow the meatballs to cool slightly before serving. Enjoy them on their own or with your favorite sauce.
