- Heat a large pan over medium heat and add olive oil. Toss in halved cherry tomatoes and cover the pan. Sweat for about 10 minutes until softened.
- Uncover and add chopped garlic, dried basil, salt, pepper, and dried oregano. Sauté for an additional 10 minutes until tomatoes are completely soft.
- Transfer the mixture to a food processor and blend until smooth. Set aside to cool slightly.
- In a pan, melt butter over medium heat. Toast each side of the slices for about 2-3 minutes until golden brown and crispy.
- Spread approximately one tablespoon of the tomato mixture onto each toast. Place a sardine on top and smash it down gently.
- Sprinkle red pepper flakes over each toast and drizzle with hot honey if desired.
