Method
 

Preparation
  1. In a large mixing bowl, combine shredded pepper jack cheese and finely diced jalapeños. Stir until evenly blended.
  2. Scoop out the cheese mixture and form it into 1 ½-inch balls. Place on a parchment-lined baking sheet and freeze for 30 to 60 minutes.
  3. Heat about two inches of vegetable oil in a deep pot over medium-high heat to reach 350°F.
  4. Prepare your breading station with flour, egg-milk mixture, and seasoned breadcrumbs.
  5. Roll each frozen cheese ball in flour, dip in egg-milk mixture, and coat with breadcrumbs.
  6. Carefully lower breaded cheese balls into hot oil, frying for 3 to 4 minutes until golden brown.
  7. Remove bites from oil and drain on a plate lined with paper towels. Serve warm with dipping sauces.
