- Preheat your oven to 375°F (190°C).
- Peel and slice the sweet potatoes into approximately 1/4-inch thick rounds. Boil in water for 10-15 minutes until tender.
- Drain and layer half of the sweet potatoes in a greased baking dish.
- Sprinkle half of the cranberries over the sweet potatoes and whisk together heavy cream, brown sugar, cinnamon, salt, and pepper. Pour half over the layer.
- Repeat layering with remaining sweet potatoes and cranberries, drizzling with the remaining cream mixture.
- Sprinkle Gruyère cheese and breadcrumbs over the top.
- Bake for 30-35 minutes until golden brown and bubbly.
- Remove from oven and allow to cool for a few minutes before serving.
