  • 4 cups Sweet Potatoes peeled and thinly sliced
  • 2 cups Fresh Cranberries thawed frozen cranberries can be used
  • 1 cup Heavy Cream use coconut cream for a vegan version
  • 1/4 cup Brown Sugar
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 cup Gruyère Cheese or cheddar or mozzarella if preferred
  • 1 cup Breadcrumbs for gluten-free, substitute with gluten-free breadcrumbs

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes. Cook in boiling water for 10–15 minutes until just tender.
  3. Grease a baking dish, layer half of the sweet potato slices at the bottom.
  4. Sprinkle half of the fresh cranberries over the first layer of sweet potatoes.
  5. Mix heavy cream, brown sugar, cinnamon, salt, and pepper in a bowl. Whisk until well blended.
  6. Pour half of the creamy mixture over the first layer, then add remaining sweet potatoes and cranberries. Pour remaining cream mixture over the second layer.
  7. Sprinkle shredded Gruyère cheese and breadcrumbs on top.
  8. Bake for 30–35 minutes until the top is golden brown and edges are bubbly.
  9. Let it cool for a few minutes before serving.
