- Begin by patting the chicken thighs dry with paper towels to remove excess moisture. Lightly season both sides with salt and pepper.
- In a large skillet, heat a drizzle of cooking oil over medium to medium-high heat. Carefully add the chicken thighs and sear for about 5-7 minutes on each side, until golden brown.
- Remove the chicken from the skillet and set it aside. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the honey, soy sauce, and vinegar, and stir, scraping the bottom of the pan. Return the chicken to the skillet, spooning sauce over it.
- Allow the chicken to simmer in the sauce for about 10-15 minutes, flipping halfway through, until the sauce thickens.
- Once the chicken is cooked through, let it rest for a few minutes before serving hot with extra sauce and desired sides.
