For the Meatballs

  • 1 medium Onion shredded or chopped

  • 1/4 cup Pineapple Juice opt for fresh juice if possible
  • 1 tablespoon Cornstarch substitute with arrowroot powder if desired
For the Vegetables
  • 2 tablespoons Vegetable Oil can substitute with olive oil
  • 1 cup Red and Green Bell Peppers mix any bell pepper colors
  • 1 cup Pineapple Chunks swap with peaches if desired

Method
 

Step-by-Step Instructions
  1. Preheat your air fryer to 380°F or your oven to 400°F.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onions, eggs, garlic powder, salt, and pepper. Mix thoroughly and shape into small meatballs.
  3. Place the meatballs in the air fryer or on a lined baking sheet. Cook in the air fryer for about 10 minutes, or bake for 20-25 minutes until golden brown.
  4. Whisk together rice vinegar, brown sugar, chicken broth, ketchup, tomato paste, pineapple juice, and cornstarch until smooth for the sauce.
  5. Heat vegetable oil in a large skillet over medium-high heat. Sauté the onion and bell peppers for 1-2 minutes, then add minced garlic and stir until fragrant.
  6. Pour the sweet and sour sauce into the skillet with the sautéed vegetables and let it simmer for about 3-5 minutes to thicken.
  7. Gently add the cooked meatballs and pineapple chunks to the skillet, tossing to coat with the sauce. Cook for an additional 2 minutes.
  8. Serve the Sweet and Sour Meatballs over rice or noodles and enjoy!
