Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil and sauté minced garlic for 30 seconds. Add spinach, cooking until wilted, about 2-3 minutes. Season with salt, pepper, and optional herbs, then let cool.
  3. Roll out the thawed puff pastry into a rectangle measuring approximately 10x12 inches.
  4. Spread the cooled spinach mixture over half of the pastry and sprinkle crumbled feta on top.
  5. Fold the other half of the pastry over the filling, pressing edges to seal. Use a rolling pin to secure the seal.
  6. Cut the pastry into 1-inch strips, twist each strip gently, and place on the prepared baking sheet.
  7. Beat the egg and brush it over the tops of the pastries. Sprinkle optional toppings if desired.
  8. Bake for 15-18 minutes until golden brown and puffed up. Watch closely to avoid over-baking.
