  • 1 cup Brown Sugar or coconut sugar
  • 1 large Egg or flax egg
  • 1 cup Molasses blackstrap for stronger flavor
  • 1/2 cup Milk or almond milk
  • 1 teaspoon Vanilla Extract

Method
 

Muffin Preparation
  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin.
  2. In a bowl, whisk together the dry ingredients until well combined.
  3. In another bowl, cream the butter and sugar, then mix in the egg, molasses, and vanilla.
  4. Combine the wet and dry mixtures, alternating with the milk, and mix gently.
  5. Fill each muffin cup two-thirds full with the batter.
  6. Bake for 18 to 20 minutes until golden brown and a toothpick comes out clean.
  7. Allow to cool for 5 minutes in the tin before transferring to a wire rack.
