  1. Begin by slicing the 6 ripe bananas into approximately 1/4-inch thick rounds and arrange them in a mixing bowl.
  2. In the same bowl, add the 1/2 cup granulated sugar, 1/4 cup packed light brown sugar, and 1/4 cup melted unsalted butter to your sliced bananas.
  3. Pour in 1/4 cup of water, 2 tablespoons of lemon juice, and 1 teaspoon of vanilla extract. Dust with 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and a pinch of salt.
  4. Stir gently until the ingredients are well combined, creating a luscious banana filling.
  5. Allow the banana filling to sit for 15-20 minutes.
  6. While the banana mixture rests, grab a separate mixing bowl and whisk together 1 1/2 cups all-purpose flour, 1 1/4 cups granulated sugar, 1 1/2 teaspoons baking powder, 1/2 teaspoon baking soda, and a pinch of salt.
  7. In another bowl, whisk together 3/4 cup of cold buttermilk, 6 tablespoons of melted and slightly cooled unsalted butter, and 1 teaspoon of vanilla extract.
