For the Dressing
  • 3 tbsp Rice Vinegar Unseasoned preferred.
  • 2 tbsp Soy Sauce or Tamari Opt for tamari for gluten-free.
  • 2 tbsp Toasted Sesame Oil Essential for nutty flavor.
  • 1 tbsp Honey or Maple Syrup Use honey or for vegan, maple syrup.
  • 1 tbsp Fresh Ginger Can use ginger paste as a substitute.
  • 1 clove Garlic Optional for flavor complexity.
For the Crunchy Topping
  • 2 tbsp Sesame Seeds Mix of black and white; toast for crunch.

Method
 

Preparation Steps
  1. Wash and peel the carrots thoroughly. Create long ribbons using a Y-peeler.
  2. Submerge carrot ribbons in ice water for 5-10 minutes, then drain and pat dry.
  3. In a medium bowl, whisk together rice vinegar, soy sauce or tamari, toasted sesame oil, honey or maple syrup, and ginger. Add garlic if using.
  4. Toast sesame seeds in a dry skillet over low heat for about 2 minutes, stirring continuously.
  5. Combine carrot ribbons and dressing in a large bowl and toss until coated.
  6. Garnish with toasted sesame seeds and chopped cilantro, then serve immediately.
