Ingredients

For the Pudding Base
  • 1 cup Dark Brown Sugar Provides deep butterscotch flavor; substitute with regular brown sugar for a milder taste.
  • 1 cup Plain Flour Acts as the foundation; no substitutions needed for best results.
  • 2 teaspoons Baking Powder A leavening agent for rise; always ensure it’s fresh for optimum fluffiness.
  • 75 grams Unsalted Butter Adds moisture and richness; can be replaced with margarine if needed.
  • 1 large Egg Binds ingredients and contributes richness; aquafaba is a great vegan alternative.
  • 1 cup Milk Hydrates the batter for a tender texture; use plant-based milk if preferred.
  • 1/4 cup Golden Syrup Infuses a distinct caramel flavor essential for butterscotch; dark corn syrup or maple syrup work as substitutes if needed.
For the Sauce
  • 2 tablespoons Cornflour/Corn Starch Thickens the sauce without added sweetness; arrowroot can also be used if cornflour is unavailable.
  • 2 cups Boiling Water Creates the heavenly sauce layer during baking; ensure it’s boiling for best consistency.
For Serving
  • 1 scoop Vanilla Ice Cream Complements the warm pudding beautifully; feel free to choose other ice cream flavors for a twist.

  3. In a large bowl, combine dark brown sugar, plain flour, and baking powder. Add melted butter, egg, milk, and golden syrup. Whisk until mostly lump-free.
  4. Pour the batter into your greased baking dish, smoothing the top. Sprinkle the sauce mixture over the batter.
  5. Carefully pour boiling water over the batter using a spoon to soften the stream.
