- Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and scoop out the seeds. Arrange the peppers in a baking dish.
- In a skillet, heat olive oil and add diced onion and minced garlic. Sauté for 3-4 minutes until onion is translucent.
- Add the ground turkey, seasoning with salt and pepper. Cook for 5-7 minutes until no longer pink.
- Mix in the cooked wild rice and dried cranberries, stirring for 3 minutes until well combined.
- Stuff each pepper with the turkey mixture. Top with mozzarella cheese.
- Cover with foil and bake for 25 minutes. Then uncover and bake for an additional 10-15 minutes until cheese is golden.
