  • 1 cup Wild Rice Cooked
  • 1/2 cup Dried Cranberries Unsweetened preferred
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
For the Topping
  • 1 cup Cheese Mozzarella, shredded

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and scoop out the seeds. Arrange the peppers in a baking dish.
  2. In a skillet, heat olive oil and add diced onion and minced garlic. Sauté for 3-4 minutes until onion is translucent.
  3. Add the ground turkey, seasoning with salt and pepper. Cook for 5-7 minutes until no longer pink.
  4. Mix in the cooked wild rice and dried cranberries, stirring for 3 minutes until well combined.
  5. Stuff each pepper with the turkey mixture. Top with mozzarella cheese.
  6. Cover with foil and bake for 25 minutes. Then uncover and bake for an additional 10-15 minutes until cheese is golden.
