  • 2 pieces Sirloin or Boneless Ribeye Choose steaks about 1.5 inches thick
  • 1-2 tablespoons Vegetable Oil Ideal for searing
  • to taste Salt
  • to taste Pepper
For the Chimichurri Sauce
  • 1 cup Parsley (Italian flat-leaf) Packed
  • 1/4 cup Cilantro Packed, optional
  • 1/2 cup Olive Oil Extra virgin preferred
  • 2-3 tablespoons Red Wine Vinegar
  • 1-2 cloves Garlic Minced
  • 1 teaspoon Crushed Red Pepper Flakes Adjust for spice level
  • 3/4 teaspoon Dried Oregano

Method
 

Preparation
  1. Finely mince the garlic, parsley, and cilantro. Combine in a bowl with olive oil, red wine vinegar, oregano, salt, and crushed red pepper flakes. Stir until well mixed.
  2. Preheat your oven to 415°F (213°C). Let the steak rest at room temperature for about 30 minutes. Season with salt and pepper on all sides.
  3. Heat vegetable oil in an oven-safe skillet over high heat. Sear the steak for 2 minutes on one side, then flip and sear for another 2 minutes.
  4. Transfer the skillet to the oven. Bake for 4-9 minutes depending on desired doneness. Aim for 130°F for medium-rare.
  5. Remove from the oven and let the steak rest for 5-7 minutes. Slice against the grain and serve topped with chimichurri sauce.
