For the Sauce
  • 2 tablespoons oyster sauce for umami richness
  • 2 tablespoons soy sauce low-sodium preferred
  • 1 teaspoon granulated sugar
  • 1 tablespoon dark soy sauce
For Finishing Touches
  • 1 teaspoon toasted sesame oil for drizzling

Step‑by‑Step Instructions for Shrimp Lo Mein
  1. In a mixing bowl, combine the shrimp with cornstarch, Shaoxing rice wine, salt, and neutral oil. Toss together and let sit for about 10 minutes.
  2. In a separate bowl, whisk together oyster sauce, soy sauce, dark soy sauce, and granulated sugar until dissolved.
  3. Bring a large pot of salted water to a boil. Cook the marinated shrimp for 30 seconds to 2 minutes, remove with a slotted spoon. Add lo mein noodles and cook, adding vegetables in the last 30 seconds. Drain everything.
  4. Heat a wok or pan over medium-high heat with neutral oil. Stir-fry minced garlic for 15 to 30 seconds until fragrant.
  5. Add the drained noodles, blanched vegetables, and a splash of Shaoxing rice wine. Stir-fry for 1 to 2 minutes.
  6. Gently fold in the shrimp and sauce, stir-fry for another 1 to 2 minutes. Drizzle with toasted sesame oil and toss in chopped green onions before serving hot.
