- Preheat the oven to 400°F (200°C).
- Peel the sweet potatoes and cut them into thin, even slices, about 1/4 inch thick.
- In a large resealable bag or mixing bowl, combine the sweet potato slices with olive oil, minced garlic, Parmesan cheese, salt, black pepper, and Italian seasoning. Seal the bag and shake or stir to coat evenly.
- Lightly butter a baking dish and arrange the coated sweet potatoes in a spiral formation.
- Sprinkle fresh thyme leaves and more Parmesan on top if desired.
- Roast in the preheated oven for 30-35 minutes until golden brown and tender.
- Remove from oven and allow to cool slightly before serving.
