  • 4 cups Cold Jasmine Rice Day-old rice is ideal to prevent mushiness.
  • 1/4 cup Chopped Cilantro Thai basil or parsley can also be used.

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine fish sauce, sugar, and freshly cracked black pepper. Mix well until the sugar dissolves, then set aside.
  2. Heat a wok over high heat. Add cooking oil and toss in shallots, lemongrass, chilies, and garlic. Stir-fry for 1 minute until fragrant.
  3. Add ground chicken to the wok, breaking it apart. Stir-fry for 2-3 minutes until the chicken is golden brown and fully cooked.
  4. If using eggs, push chicken to one side, add oil, crack in eggs, and scramble for 1-2 minutes. Mix with the chicken.
  5. Add cold jasmine rice to the wok, breaking up clumps. Pour sauce mixture around the edge, stir all together, and heat for 2-3 minutes.
  6. Remove from heat, stir in chopped cilantro, and serve immediately. Offer lime wedges for extra zest.
