Cooking Steps
- Heat 2 tablespoons of vegetable oil over medium heat for 1-2 minutes.
- Sauté 2 cloves of minced garlic, 1 chopped green chili, and 1 tablespoon of minced fresh ginger for 1 minute.
- Add 1 large diced onion and cook for 3-4 minutes until golden brown.
- Stir in 1 teaspoon each of turmeric powder, chili powder, ground cumin, and ground coriander; cook for 1 minute.
- Add 2 chopped tomatoes and 1/2 cup of water, season with salt, cover and simmer for about 5 minutes.
- Add the diced chicken thighs and mix well; reduce heat and simmer uncovered for about 20 minutes.
- Finish with 1 tablespoon of lemon juice and garnish with fresh coriander.
