Cooking Instructions
  1. Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  2. Add 1 chopped medium yellow onion and 1 cup of quartered white button mushrooms. Sauté for about 4-5 minutes until onions are translucent.
  3. Transfer onions and mushrooms to a plate and set aside, drizzling in more olive oil if the skillet looks dry.
  4. Add 2 medium zucchini, chopped into bite-sized chunks, to the skillet in a single layer. Cook undisturbed for 5 minutes.
  5. Lower the heat and stir in 2 minced garlic cloves, 1 teaspoon of Italian seasoning, and a pinch of red pepper flakes. Cook for another 1-2 minutes.
  6. Season with kosher salt and freshly ground black pepper to your preference. Serve immediately.
