Step-by-Step Instructions
  1. Begin by washing and slicing about 8 ounces of fresh mushrooms. Clean 4 cups of fresh spinach, and mince 2 cloves of garlic.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.
  3. Add the sliced mushrooms in a single layer, allowing to sear for 3-4 minutes without stirring.
  4. Stir occasionally for another 5-7 minutes until golden brown and tender.
  5. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to brown it.
  6. Slowly add the spinach and mix, cooking until wilted, about 2-3 minutes.
  7. Season with salt, pepper, and drizzle lemon juice, tossing everything together.
  8. Transfer to a serving dish and enjoy hot as a side or mixed into grain bowls.
