Preparation Steps
- Take the Prime Rib Roast out of the refrigerator and let it sit at room temperature for about 1 hour.
- Preheat your oven to 450°F (230°C).
- Mix minced garlic, chopped fresh rosemary, kosher salt, black pepper, and olive oil to create a flavorful paste.
- Pat the roast dry and rub the garlic-rosemary mixture generously all over.
- Place the roast, bone-side down if applicable, into a roasting pan fitted with a rack.
- Cook the roast at 450°F (230°C) for 20 minutes.
- Reduce the oven temperature to 325°F (163°C) and continue roasting for approximately 1 to 1.5 hours.
- Check for an internal temperature of 130°F (54°C) for medium-rare.
- Once the desired temperature is reached, remove the roast and cover it loosely with foil to rest for at least 20 minutes.
- Prepare the au jus by pouring off excess fat from the roasting pan and adding beef broth and red wine.
- Simmer for 10-15 minutes until slightly thickened, then strain if desired.
- Slice the rested roast against the grain into thick servings and serve with au jus.
