  • 1 whole Prime Rib Roast bone-in or boneless
  • 6 cloves Garlic minced
  • 2 tablespoons Fresh Rosemary chopped
  • 2 tablespoons Kosher Salt
  • 1 teaspoon Black Pepper freshly ground
  • 2 tablespoons Olive Oil
For the Au Jus
  • 2 cups Beef Broth
  • 1/2 cup Red Wine
  • 4 sprigs Thyme

Method
 

Preparation Steps
  1. Take the Prime Rib Roast out of the refrigerator and let it sit at room temperature for about 1 hour.
  2. Preheat your oven to 450°F (230°C).
  3. Mix minced garlic, chopped fresh rosemary, kosher salt, black pepper, and olive oil to create a flavorful paste.
  4. Pat the roast dry and rub the garlic-rosemary mixture generously all over.
  5. Place the roast, bone-side down if applicable, into a roasting pan fitted with a rack.
  6. Cook the roast at 450°F (230°C) for 20 minutes.
  7. Reduce the oven temperature to 325°F (163°C) and continue roasting for approximately 1 to 1.5 hours.
  8. Check for an internal temperature of 130°F (54°C) for medium-rare.
  9. Once the desired temperature is reached, remove the roast and cover it loosely with foil to rest for at least 20 minutes.
  10. Prepare the au jus by pouring off excess fat from the roasting pan and adding beef broth and red wine.
  11. Simmer for 10-15 minutes until slightly thickened, then strain if desired.
  12. Slice the rested roast against the grain into thick servings and serve with au jus.
