Preparation
  1. Preheat your oven to 375°F (190°C) and lay out the puff pastry on a baking sheet lined with parchment paper. Drizzle olive oil over the surface and sprinkle with salt and pepper.
  2. Evenly scatter the crumbled goat cheese across the flatbread, then add pomegranate seeds and chopped pistachios on top.
  3. Bake in the oven for 12-15 minutes until edges are golden brown and cheese is slightly melted.
  4. While baking, warm honey and chopped fresh rosemary in a saucepan over low heat for 2-3 minutes until fragrant.
  5. Drizzle the rosemary-infused honey over the baked flatbread, slice into squares, and serve immediately.
