Cooking Steps
  1. Preheat your oven to 400°F (200°C) and grease a baking dish lightly with olive oil.
  2. In a medium bowl, whisk together the light brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger until smooth.
  3. Pat the salmon fillets dry, rub with olive oil, and season with salt and black pepper.
  4. Place the salmon fillets skin-side down in the greased baking dish and spoon two-thirds of the glaze over the top.
  5. Scatter the diced pineapple around the salmon in the baking dish.
  6. Bake for 12-15 minutes until the salmon is opaque and flakes easily with a fork.
  7. Switch to broil for an additional 1-2 minutes for extra caramelization.
  8. Let the salmon rest for about 5 minutes before serving, garnishing with parsley.
