- Preheat your oven to 400°F (200°C) and grease a baking dish lightly with olive oil.
- In a medium bowl, whisk together the light brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger until smooth.
- Pat the salmon fillets dry, rub with olive oil, and season with salt and black pepper.
- Place the salmon fillets skin-side down in the greased baking dish and spoon two-thirds of the glaze over the top.
- Scatter the diced pineapple around the salmon in the baking dish.
- Bake for 12-15 minutes until the salmon is opaque and flakes easily with a fork.
- Switch to broil for an additional 1-2 minutes for extra caramelization.
- Let the salmon rest for about 5 minutes before serving, garnishing with parsley.
