Preparation
- Heat 2 tablespoons of sesame oil in a large, non-stick skillet over medium heat for 1-2 minutes until fragrant.
- Add 2 cloves of minced garlic to the skillet and sauté for about 30 seconds until golden.
- Introduce 1 cup of frozen peas and carrots, stir-frying for 3-4 minutes until heated through.
- Add 3 cups of cold, cooked jasmine rice, 3 tablespoons of soy sauce, and a pinch of black pepper. Stir gently for 2-3 minutes.
- Fold in 1 cup of diced pineapple and optional ½ cup of cashews. Cook for an additional 2-3 minutes.
- Remove from heat and garnish with chopped green onions and fresh cilantro before serving.
