  • 3 medium Mashed bananas Ripe bananas are best
  • 1/2 cup Unsweetened applesauce Can be substituted with yogurt or additional oil
  • 1/2 cup Creamy peanut butter Can be substituted with almond butter for nut-free
  • 1/3 cup Canola or vegetable oil Melted coconut oil works too
  • 2 large Large eggs
  • 1 teaspoon Vanilla extract Use pure vanilla for best flavor
  • 1 cup Miniature semi-sweet chocolate chips Can substitute with peanut butter chips

Method
 

Main Instructions
  1. Preheat your oven to 350°F (175°C). Spray loaf pans with cooking spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, mash the ripe bananas and stir in applesauce, peanut butter, oil, eggs, and vanilla.
  4. Gently pour the wet banana mixture into the dry ingredients and fold until just combined.
  5. Fold in chocolate chips until evenly dispersed.
  6. Divide batter between pans, smoothing the tops. Optionally sprinkle extra chocolate chips on top.
  7. Bake for 45 to 50 minutes, checking with a toothpick for doneness.
  8. Let cool in pans for 15 to 20 minutes before transferring to wire rack.
