  • 12 oz Rigatoni or Penne Pasta Can substitute with gluten-free pasta
For the Sauce
  • 8 oz Fresh Mozzarella Cheese Can replace with San Marzano tomatoes for more authentic flavor
  • 24 oz Tomato Passata Canned tomatoes can be used if passata isn't available
  • 2 cloves Garlic Cloves Garlic powder can be used instead
  • 2 tbsp Extra Virgin Olive Oil Preferred for flavor
  • 10 leaves Fresh Basil Leaves Dried basil can be used but fresh is ideal
For the Topping
  • 1 cup Grated Parmesan Cheese Pecorino Romano makes a great alternative
  • 1 tsp Salt Sea salt can be used
  • 1 tsp Black Pepper
  • 1 tsp Crushed Red Pepper Flakes Optional, omit if desired

Method
 

Step-by-Step Instructions
  1. Boil the pasta in a large pot of salted water for 2 minutes less than package instructions for al dente texture. Drain and set aside.
  2. Sauté minced garlic in olive oil over medium heat for about 30 seconds until fragrant.
  3. Add tomato passata to the skillet with garlic, season with salt and pepper, and simmer for 10-15 minutes. Stir in half of the torn basil.
  4. Preheat the oven to 400°F (200°C) while the sauce simmers. Prepare your baking dish.
  5. Toss cooked pasta into the skillet with the sauce until evenly coated.
  6. Transfer to a baking dish, top with torn mozzarella, grated Parmesan, and remaining basil.
  7. Bake for 15-20 minutes until cheese is bubbly and golden.
  8. Remove from the oven and let cool slightly before serving. Garnish with fresh basil.
