Marinade

  • 4 cloves Garlic Fresh garlic is recommended.
  • 1 teaspoon Ground Turmeric
  • 1 tablespoon Chili Powder Adjust quantity based on spice tolerance.
  • 1/2 teaspoon Cayenne Powder Use sparingly.
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Cumin
  • 1/4 cup Fresh Cilantro Extra can be used for garnishing.
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper

  • 5 lbs Whole Chicken Spatchcocking is recommended.

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C) and prepare a large rimmed sheet pan with a cooling rack inside.
  2. Combine yogurt, lemon juice, ginger, garlic, turmeric, chili powder, cayenne, cinnamon, cumin, cilantro, salt, and pepper to make the marinade.
  3. Pat the chicken dry and spatchcock it for even cooking.
  4. Coat the chicken with the marinade, covering every part, and let it marinate for at least 30 minutes or up to 24 hours.
  5. Roast the chicken in the oven for approximately 1 hour and 25 minutes, or until internal temperature reaches 165°F.
  6. Let the chicken rest before carving and serve with lemon rice and raita.
