- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 minced garlic cloves and sauté for about 30 seconds.
- Add 4 cups of fresh, chopped spinach and cook for about 2-3 minutes until vibrant and wilted. Season with salt, black pepper, and 1 teaspoon of dried oregano.
- Lay 4 whole wheat tortillas flat. Distribute the sautéed spinach evenly on one half of each tortilla.
- Top with ½ cup crumbled feta cheese and 1 cup shredded mozzarella cheese. Add thinly sliced red onion.
- Fold each tortilla in half to enclose the filling. Press gently to seal edges.
- Coat the skillet with cooking spray or olive oil and heat over medium heat.
- Cook folded quesadillas for about 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes.
- Transfer quesadillas to a cutting board and let rest for 1 minute before slicing into wedges.
- Serve warm with tzatziki sauce or salad.

Notes
Ensure skillet is fully heated before cooking. Allow spinach filling to cool slightly to avoid sogginess.
