Method
 

Cooking Steps
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 minced garlic cloves and sauté for about 30 seconds.
  2. Add 4 cups of fresh, chopped spinach and cook for about 2-3 minutes until vibrant and wilted. Season with salt, black pepper, and 1 teaspoon of dried oregano.
  3. Lay 4 whole wheat tortillas flat. Distribute the sautéed spinach evenly on one half of each tortilla.
  4. Top with ½ cup crumbled feta cheese and 1 cup shredded mozzarella cheese. Add thinly sliced red onion.
  5. Fold each tortilla in half to enclose the filling. Press gently to seal edges.
  6. Coat the skillet with cooking spray or olive oil and heat over medium heat.
  7. Cook folded quesadillas for about 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes.
  8. Transfer quesadillas to a cutting board and let rest for 1 minute before slicing into wedges.
  9. Serve warm with tzatziki sauce or salad.
