Meatball Preparation
- In a large bowl, combine ground meat, breadcrumbs, egg, Italian seasoning, smoked paprika, and salt and pepper. Mix gently until just combined.
- Scoop portions of the mixture and roll into meatballs. Place on a parchment-lined baking sheet.
- Heat a skillet over medium heat and add olive oil. Sear meatballs for 2-3 minutes on each side until golden brown.
- Add broth to the skillet, cover, and cook for 10-15 minutes, flipping halfway through.
- Optionally, bake meatballs at 400°F for 15-20 minutes until cooked through.
- Optionally, air fry meatballs at 360°F for 8 minutes, flipping halfway through.
Sauce Preparation
- In a saucepan, melt butter and whisk in flour to form a roux.
- Gradually whisk in heavy whipping cream, then add minced garlic and Parmesan cheese, stirring until smooth.
- Stir in spinach and sun-dried tomatoes, cooking until spinach wilts.
- Combine cooked meatballs with sauce and simmer for a couple of minutes.
- Serve hot over pasta, rice, or with crusty bread.
