  • 2 large eggs
  • 1 cup all-purpose flour

For Cooking
  • 2 tablespoons olive oil can be replaced with avocado or vegetable oil
  • 1 cup mozzarella cheese or any melty cheese like provolone
  • 1 cup Monterey Jack cheese or any melty cheese
  • 1 tablespoon fresh parsley optional, for garnish

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Slice chicken breasts into cutlets and season with fine sea salt.
  3. Zest one lemon and juice it, reserving wedges for garnish.
  4. Whisk together eggs and flour for the egg wash in one bowl; mix panko, Romano cheese, oregano, lemon zest, garlic powder, and black pepper in another bowl.
  5. Dip chicken cutlets in egg wash, then press into breadcrumb mixture to coat thoroughly.
  6. Heat olive oil in a skillet over medium-low heat and pan-sear chicken for about 2 minutes on each side until golden brown.
  7. Transfer to baking sheet, top with mozzarella and Monterey Jack cheese, and bake for 13-15 minutes until chicken reaches 165°F (74°C).
  8. Squeeze fresh lemon juice over the chicken and garnish with parsley before serving.
