- Combine warm water, granulated sugar, and instant yeast in a bowl. Let sit for 10 minutes until foamy.
- In a large bowl, whisk together flour, sugar, and salt until well combined.
- Add yeast mixture, eggs, butter, and vanilla extract to the dry ingredients. Mix until a sticky dough forms.
- Knead dough by hand for 15 minutes, or use a stand mixer for 8-10 minutes, until smooth and elastic.
- Fold in raisins, cranberries, and candied orange peel until well distributed.
- Place dough in greased bowl, cover with a damp cloth, and set in a warm place to rise for 1-2 hours.
- Punch down the dough, shape into a ball, and place in a panettone mold. Let rise for another 30-45 minutes.
- Preheat oven to 350°F (175°C) and bake for 45-55 minutes until golden brown.
