Step-by-Step Instructions for Baked Apple Fritter Bites with Cider Glaze
  1. Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with nonstick cooking spray.
  2. In a medium mixing bowl, combine all-purpose flour, baking powder, kosher salt, and ground cinnamon. Whisk until well combined.
  3. In a separate large bowl, whisk together melted unsalted butter and granulated sugar until fully combined. Add egg, vanilla extract, and applesauce. Mix until smooth.
  4. Gently fold the dry ingredient mix into the wet mixture and add finely diced apples, carefully incorporating them into the batter.
  5. Using a tablespoon, scoop rounded portions of the batter onto the prepared baking sheet, allowing space between each scoop.
  6. Bake the fritters for about 10 minutes until lightly golden and springy to touch.
  7. After baking, turn the broiler to high and broil for an additional 2–4 minutes until golden brown.
  8. While fritters are broiling, prepare the glaze by whisking together powdered sugar and apple cider or juice until pourable.
  9. Once fritters are done broiling and slightly cooled, brush the glaze generously over them.
  10. Let the glazed fritters sit for about 15 minutes before serving.
