  • 2 cloves garlic Minced
  • 4 slices prosciutto Can be substituted or omitted
For the Pastry
  • 1 sheet puff pastry All-butter variety preferred
  • 1 large egg yolk Mixed with water for brushing
For Cooking
  • 1 tablespoon olive oil For searing chicken
  • 2 tablespoons butter For sautéing mushrooms

Method
 

Step-by-Step Instructions
  1. Season the chicken breasts with salt and pepper. Sear in olive oil for 4-5 minutes on each side, then cool.
  2. Melt butter in the same skillet. Add mushrooms, shallots, and garlic; cook until reduced to a thick paste. Cool the duxelles.
  3. On plastic wrap, lay prosciutto slices, spread duxelles over it, and place the chicken in the center. Roll tightly and chill.
  4. Preheat oven to 400°F. Roll out puff pastry, wrap around chicken roll, seal edges, and chill again.
  5. Place on a baking sheet, brush with egg yolk mixture, make slits for steam, and bake for 25-30 minutes until golden.
