- Season the chicken breasts with salt and pepper. Sear in olive oil for 4-5 minutes on each side, then cool.
- Melt butter in the same skillet. Add mushrooms, shallots, and garlic; cook until reduced to a thick paste. Cool the duxelles.
- On plastic wrap, lay prosciutto slices, spread duxelles over it, and place the chicken in the center. Roll tightly and chill.
- Preheat oven to 400°F. Roll out puff pastry, wrap around chicken roll, seal edges, and chill again.
- Place on a baking sheet, brush with egg yolk mixture, make slits for steam, and bake for 25-30 minutes until golden.
