  • 1 cup Butter softened
  • 8 oz Cream Cheese softened
  • 2 cups All-Purpose Flour gluten-free flour can be used
  • 1 cup Powdered Sugar
For the Filling
  • 1 cup Chopped Pecans walnuts can be substituted
  • 1 cup Granulated Sugar brown sugar can add depth
  • 2/3 cup Corn Syrup
  • 2 Eggs beaten
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt to balance sweetness

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine butter, cream cheese, flour, and powdered sugar. Use a hand mixer on low speed until smooth. Chill for 30 minutes.
  2. Preheat oven to 350°F (175°C). Scoop about a tablespoon of dough into each compartment of a greased mini muffin tin. Press the dough to form cups.
  3. In a medium bowl, whisk together chopped pecans, granulated sugar, corn syrup, beaten eggs, vanilla extract, and salt until well combined.
  4. Pour the filling into the crusts in the mini muffin tin, filling them about three-quarters full.
  5. Bake for 20-25 minutes or until filling is set and tops are golden brown. Watch closely towards the end.
  6. Remove from oven and cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
