  • 1 cup Shredded Cheese Cheddar or Monterey Jack for meltiness
  • 3 tablespoons Bacon Fat Reserve from cooked bacon
  • 1 cup Cooked, Crumbled Bacon Thick-sliced for extra heartiness
  • 3 tablespoons Vegetable Oil Any neutral oil, peanut oil preferred
  • 2 tablespoons Jalapeños Chopped; substitute with Anaheim chiles for milder

Step-by-Step Instructions
  1. Prepare the Filling: Sprinkle 1/4 cup of shredded cheese over two small flour tortillas. Add 1/6 of the crumbled bacon on one and 1/6 of the chopped jalapeños on the other.
  2. Heat the Skillet: Combine equal parts vegetable oil and reserved bacon fat in a skillet and heat until shimmering.
  3. Cook the Quesadillas: Place tortillas, plain side down, into the skillet. Cook for 2-3 minutes until golden brown.
  4. Flip and Press: Flip one tortilla onto the other and press lightly. Cook 1-2 minutes until the new side is golden.
  5. Drain Excess Grease: Remove from skillet and place on paper towels to blot excess grease.
  6. Repeat the Process: Continue with remaining tortillas and filling until all are cooked.
  7. Serve Warm: Enjoy with your favorite salsa after cooking.
