Ingredients
  

For the Meatballs
  • 1 pound Ground Chicken Preferably chicken thigh for juiciness.
  • 1/2 cup Breadcrumbs Add more if using moist chicken.
  • 1 large Egg Acts as a binder.
  • 3 cloves Garlic Minced.
  • 1/2 medium Red Onion Finely chopped.
  • 1/4 cup Fresh Parsley Chopped.
  • 1 tablespoon Fresh Dill Chopped.
  • 1 teaspoon Lemon Zest Zested from an organic lemon.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Adjust to taste.
  • 2 tablespoons Olive Oil For drizzling.
For the Tzatziki Sauce
  • 1 cup Greek Yogurt Can use dairy-free yogurt.
  • 1 medium Cucumber Grated and drained well.
  • 2 tablespoons Lemon Juice Freshly squeezed.
  • 1 clove Minced Garlic For tzatziki.
  • 1 tablespoon Fresh Dill Chopped.
  • 1 pinch Salt Adjust to taste.

Method
 

Meatball Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, minced garlic, finely chopped red onion, fresh parsley, dill, lemon zest, salt, and pepper. Mix gently until just combined.
  3. Form the mixture into 1.5-inch meatballs and place them on the prepared baking sheet.
  4. Drizzle olive oil over the meatballs and bake for 18-20 minutes or until golden brown and cooked through.
Tzatziki Preparation
  1. In a medium bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, fresh dill, and a pinch of salt. Stir until well combined.
  2. Refrigerate the tzatziki sauce for at least 15 minutes before serving.
Serving
  1. Once cooked, allow the meatballs to rest for a few minutes before serving them warm alongside the chilled tzatziki sauce.
