- Prepare the Apple Filling: Dicing apples, toss them with lemon juice, brown sugar, apple pie spice, and salt. Cook in a saucepan over medium heat for 5 minutes until softened. Thicken with cornstarch mixed with water, cook until bubbly.
- Make the Pie Dough: Combine flour, sugar, and salt in a bowl. Cut in butter until resembling coarse crumbs. Gradually add cold water until dough forms; chill for 1 hour.
- Roll the Dough: Roll out dough to 1/8" to 1/4" thickness, cut into circles, and refrigerate for 15 minutes.
- Assemble Hand Pies: Spoon apple filling onto half of each dough circle, fold and seal edges with a fork.
- Chill Before Baking: Chill assembled pies for 15-30 minutes.
