Method
 

Cooking Steps
  1. Preheat your oven to 350°F (175°C). Gather your roasting pan and meat thermometer.
  2. In a mixing bowl, combine softened unsalted butter, olive oil, minced garlic, chopped sage, rosemary, thyme, parsley, oregano, salt, and black pepper. Blend thoroughly.
  3. Remove giblets from the turkey cavity, pat the turkey dry, and season the inside of the cavity with salt and pepper.
  4. Stuff the cavity with quartered onion, whole garlic, and lemon, along with fresh herb sprigs.
  5. Slather the herb butter mixture generously all over the turkey, even beneath the skin.
  6. Tie the turkey legs together with kitchen twine and tuck the wing tips underneath.
  7. Place the turkey in the oven and roast for 2.5 to 3 hours. Check that the internal temperature reaches 165°F (74°C).
  8. Remove from the oven, cover loosely with foil, and let it rest for 20 minutes before carving.
