Cooking Steps
- Preheat your oven to 350°F (175°C). Gather your roasting pan and meat thermometer.
- In a mixing bowl, combine softened unsalted butter, olive oil, minced garlic, chopped sage, rosemary, thyme, parsley, oregano, salt, and black pepper. Blend thoroughly.
- Remove giblets from the turkey cavity, pat the turkey dry, and season the inside of the cavity with salt and pepper.
- Stuff the cavity with quartered onion, whole garlic, and lemon, along with fresh herb sprigs.
- Slather the herb butter mixture generously all over the turkey, even beneath the skin.
- Tie the turkey legs together with kitchen twine and tuck the wing tips underneath.
- Place the turkey in the oven and roast for 2.5 to 3 hours. Check that the internal temperature reaches 165°F (74°C).
- Remove from the oven, cover loosely with foil, and let it rest for 20 minutes before carving.
