Step-by-Step Instructions
  1. Gather all your ingredients: focaccia, roast chicken, baby potatoes, mayonnaise, honey, Calabrian chili paste, and assorted herbs. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, place the chicken legs and halved baby potatoes. Drizzle with olive oil, salt, and pepper. Roast for about 25-30 minutes until golden and crispy.
  3. While roasting, prepare the aioli by caramelizing thinly sliced lemon in olive oil. Mix with mayonnaise and honey, then stir in Calabrian chili paste.
  4. Once cooled, slice the focaccia horizontally. Layer with roast chicken and baby potatoes, drizzle with aioli, and add fresh herb salad.
