Make the Meatballs
- In a bowl, combine ground beef, minced garlic, finely minced onions, breadcrumbs, baking soda, and fresh herbs. Mix thoroughly, cover, and refrigerate for 2 hours. Preheat the oven to 425°F (220°C). Shape into meatballs and bake for 30–40 minutes.
Roast the Potatoes
- In a bowl, toss potato wedges with olive oil, salt, cumin, paprika, and dried oregano. Spread on a baking sheet and roast for 40–60 minutes, flipping halfway.
Prepare the Tzatziki Sauce
- Combine Greek yogurt, grated cucumber, minced garlic, and lemon juice. Add dill or mint and salt, stir well, and chill.
Build the Bowl
- Assemble the bowl with lettuce, tomatoes, cucumbers, red onion, olives, roasted potatoes, and meatballs. Drizzle with tzatziki and garnish.
