Ingredients
  

For the Marinade
  • 0.5 cups Olive Oil Swap for avocado oil if grilling at high temperatures
  • 0.25 cups Balsamic Vinegar or Red Wine Vinegar Apple cider vinegar works as a great alternative
  • 2 tablespoons Worcestershire Sauce Tamarind paste can offer a vegetarian twist
  • 2 tablespoons Dijon Mustard In a pinch, yellow mustard can stand in
  • 3 cloves Garlic (minced) Garlic powder works if fresh isn't on hand
  • 1 tablespoon Fresh Rosemary (chopped) Thyme or oregano are perfect substitutes
  • 1 tablespoon Fresh Thyme (chopped) Try basil for a change
  • 1 teaspoon Coarse Sea Salt Kosher salt can be used, adjusting the quantity as necessary
  • 0.5 teaspoon Freshly Ground Black Pepper Substitute with white pepper for a different taste
Optional Ingredients
  • 1 teaspoon Crushed Red Pepper Flakes Omit for a milder marinade or reduce it to ½ tsp
  • 1 zest of Lemon Lime zest makes a suitable replacement

Method
 

Preparation Steps
  1. In a large mixing bowl, combine ½ cup of olive oil, ¼ cup of balsamic vinegar, 2 tablespoons of Worcestershire sauce, 2 tablespoons of Dijon mustard, and 3 cloves of minced garlic. Whisk until well blended.
  2. Stir in 1 tablespoon of chopped fresh rosemary, 1 tablespoon of chopped fresh thyme, 1 teaspoon of coarse sea salt, and ½ teaspoon of freshly ground black pepper. Optionally add crushed red pepper flakes and lemon zest.
  3. Take 1-2 lbs of your preferred steak cut and place it in a zip-top bag or shallow dish. Pour the marinade over the meat, ensuring it's well-coated. Massage the marinade into the steak for about 1-2 minutes.
  4. Let the marinated steak sit for a minimum of 30 minutes at room temperature, or for best results, let it marinate for 2-4 hours in the refrigerator.
  5. Preheat your grill or skillet over medium-high heat (around 400°F). Remove the steak from the marinade and sear it for 4-5 minutes per side until you achieve a beautifully brown crust.
  6. Transfer your steak to a cutting board and let it rest for 5-10 minutes to allow the juices to redistribute.

Notes

Ensure the steak is dry before cooking for the best crust. Fresh herbs are recommended for better flavor. Unused marinade that hasn’t touched raw meat can be used as a basting sauce.
