- Begin by searing the chuck roast in a skillet over medium-high heat for about 3–4 minutes per side, until it forms a golden-brown crust. Transfer the beef to your slow cooker.
- Chop the Yukon Gold potatoes into bite-sized pieces and place them around the beef in the slow cooker. Add the softened garlic butter and beef broth.
- Set your slow cooker to LOW for 7-8 hours or HIGH for 4-5 hours. Check that the beef shreds easily when cooked.
- Once cooked, transfer the beef and potatoes to a serving platter. Drizzle remaining garlic butter sauce over them and garnish with freshly chopped parsley.
