  • 2 tbsp Lime Juice
  • 1 tbsp Sugar
  • 2 cloves Garlic minced

  • 1 cup Shredded Chicken

Step-by-Step Instructions
  1. Soak the glass noodles in warm water for 5–10 minutes until soft, then drain and rinse with cold water.
  2. Julienne cucumbers, carrots, and bell peppers while noodles soak; chop herbs and set aside.
  3. In a medium bowl, whisk together fish sauce, lime juice, sugar, and minced garlic until sugar dissolves.
  4. Combine noodles, chopped vegetables, and herbs in a large bowl; drizzle with dressing and toss gently.
  5. Refrigerate for 30 minutes before serving. Add optional proteins if desired.
