Method
 

Preparation Steps
  1. Cook the rice noodles according to package instructions, typically boiling for 3-5 minutes until just tender. Drain and rinse under cold water.
  2. In a bowl, whisk together peanut butter, hoisin sauce, lime juice, soy sauce, and water until smooth.
  3. In a salad bowl, combine cooled noodles, cucumber, cabbage, carrot, red pepper, cilantro, and mint. Toss gently.
  4. Drizzle the dressing over the salad and toss to coat. Garnish with chopped peanuts and serve immediately.
