- Fold the wet mixture into the dry ingredients until just combined, avoiding overmixing.
- Mix together brown sugar and additional cinnamon for the filling, then set aside.
- Spoon half the muffin batter into each cup, sprinkle with cinnamon filling, and top with remaining batter.
